For those of you who don’t know, I have a thing for soups. And this Tuscan Vegetable Soup taken from Ellie Krieger’s The Food You Crave delivers precisely what it promises. It is hearty fare, made quickly. This soup is brimming with carrots, celery, zucchini, tomatoes, and spinach. Processing half of the beans before adding them to the soup provides just enough thickness. I had garbanzo beans on hand, although Krieger calls for white beans.
But the real key to this soup is the sage, which adds an earthy astringency …
I now have only 3 more soups to complete in Krieger’s book. Perhaps focusing on smaller accomplishments (only 3 more!) might allow me to tackle these books more easily. I now have completed 47 recipes from this book. Percentage complete: 24.87%
And just for the record, I have completed 7 of Krieger’s 10 soup recipes. Percentage complete: 70%
