I made this cold soup earlier this week to share with a friend after we finished studying together. In preparation for our upcoming language exams, we have designated Tuesday night to be the night we share our faltering knowledge of Italian. Cacik, of course, is hardly Italian. But this Turkish soup of diluted yogurt, milk, grated cucumber, garlic, and fresh mint was an appropriate ending to a warm, early summer day.

lavash crackersAlso, of note, I recently completed both the beetroot salad and the braised fennel dishes featured in Moro East. Sadly, both days were a bit hectic, and so there is no documentation of which to speak. But, I now indeed have made 22 dishes from this book. Percentage complete: 13.75%
