The highlight of this dish was the pea shoots. We felt rather silly going out to the garden to snip off some baby pea shoots, but it was well worth it when we sat down to eat this lentil salad with tzatziki, avocado, and pea shoots—our third completed recipe from Sarah Britton’s My New Roots. We had to adapt this slightly by using red lentils (what we had on hand) rather than the black lentils the recipe includes. I imagine the black lentils would have held their shape better after cooking, but the red lentils worked just fine.
